A Mess of Somethin’!

Now and again it takes just a little mess of somethin’ to do a body good!
A Mess of Somethin’ 
  • 4 good size red potatoes
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
Bring a large pot of salted water to a boil, add potatoes, and cook until tender but still firm. This will take approximately 15 minutes.  Drain the potatoes, let cool, and cut into 1/2 inch cubes (or slice to preference).  In a large skillet heat 1 tablespoon olive oil over medium high heat adding the onion and bell pepper. Stirring often, the onions and peppers should cook soft within approximately 5 minutes.  Transfer to a plate and set aside.

Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high.  Add potatoes, salt and black pepper. The potatoes should cook to a crisp brown stirring occasionally; about 10 minutes. Add the cooked onions and peppers cooking for another minute.  Serve hot.
 
A Mess of Somethin’ has always been a Reynolds Still favorite and my guess is a comfort food most everyone has enjoyed many a time.
